Garlic Scape Pesto

Description
If you check out your garlic plants you may well find some garlic scapes - curving stems which contain seeds. Garlic scapes are delicious, tender, and an ideal ingredient for garlic pesto.
Ingredients
- 1⁄2c10-12 garlic scapes
- 1⁄3cchopped almonds
- 1⁄3cparmigiano-reggiano
- 1⁄2colive oil
- sea salt
- pepper
Instructions
In a food processor (or blender) combine scapes, almonds, grated cheese and 1/4 cup of olive oil. Blend until combined. Scrape sides of processor with spatula, add the other 1/4 cup of olive oil, and blend again. Add some salt and pepper and give it one more whirl.
If you like your pesto smoother, keep blending until desired consistency is reached.
Serving suggestions: Toss a spoonful of the pesto in with some of the wonderful new pototoes we are seeing at the market.
Tuck some under the skin of chicken and roast.
Use as a dip with crackers.
