Description
This recipe pays homage to most seasonal fruits, a favourite being raspberries. The term 'fool' is derived from the French word 'fouler', which means to mash.
Ingredients
- 2raspberries
- 1⁄4csugar
- 2cwhipped cream
- mint to garnish
Instructions
Macerate the berries for 10 minutes by sprinkling sugar to taste on them (this helps bring out some of the juices). Mash 1/2 the berries and mix with the whole ones. Place a big spoonful of cream in a goblet. On top of this add an equal portion of berries. Keep building up these layers and serve with a sprig of mint.
Notes
Optional: Can be served with gingersnaps or chocolate cookies on the side.
