Description
Use early spring rhubarb to make a delicous cake combination of sweet and tart.
Ingredients
- 1⁄2cbutter
- 1 1⁄2cbrown sugar
- 1egg
- 1tbaking soda
- 1cbuttermilk
- 2cflour
- 1tvanilla
- 1tcinnamon
- 1⁄4tcloves
- 2crhubarb, small pieces
Instructions
Cream together butter and brown sugar. Add one egg and vanilla and mix. Dissolve baking soda in buttermilk. Mix dry ingredients in separate bowl. Add buttermilk, rhubarb, and flour mixture to creamed ingredients and stir until just mixed. Pour into greased 9x9 pan. Combine 1/2 cup sugar, 1 tsp cinnamon, 1 tsp marg and sprinkle topping over cake mix. Bake at 40-45 minutes at 350* oven.
