Description
With only 3 ingregients not available at the market (olive oil, parmesan and lemons), this is the perfect local summer salad (especially from a market in the garden behind St. John's church!).
Ingredients
- 1bag of mixed salad greens or 1 lg. head of romaine lettuce
- 1cgarlic croutons (you can use a day-old baguette from flour power!)
- parmesan cheese to taste
- 1⁄2colive oil
- 2Tapple wine vinegar (from beaufort gardens' table)
- 1garlic clove, crushed
- 1tfresh lemon juice
- 1⁄2tsalt (+ ground pepper to taste)
- 1Tmayonnaise or dijon mustard
- 3Tfinely chopped fresh parsley, curly or flat-leaf
Instructions
Combine dressing ingredients in a blender (everything but the top 3 ingredients) and blend until smooth. Can be stored covered in the fridge for up to one week. Pour over salad and toss with grated parmesan and croutons.
