St. John Salad

Description

With only 3 ingregients not available at the market (olive oil, parmesan and lemons), this is the perfect local summer salad (especially from a market in the garden behind St. John's church!).

Ingredients

  • 1
     
    bag of mixed salad greens or 1 lg. head of romaine lettuce
  • 1
    c
    garlic croutons (you can use a day-old baguette from flour power!)
  •  
     
    parmesan cheese to taste
  • 1⁄2
    c
    olive oil
  • 2
    T
    apple wine vinegar (from beaufort gardens' table)
  • 1
     
    garlic clove, crushed
  • 1
    t
    fresh lemon juice
  • 1⁄2
    t
    salt (+ ground pepper to taste)
  • 1
    T
    mayonnaise or dijon mustard
  • 3
    T
    finely chopped fresh parsley, curly or flat-leaf

Instructions

Combine dressing ingredients in a blender (everything but the top 3 ingredients) and blend until smooth.  Can be stored covered in the fridge for up to one week.  Pour over salad and toss with grated parmesan and croutons.
